Jamaican Rice and peas

Hey Everyone,
Rice and Peas is one of my favorite dishes from Jamaica. I wanted to show you guys how I cook Rice and peas with Gunguh green Pigeon,,,Enjoy 😉

HOW TO COOK JAMAICAN RICE AND PEAS ( everything used)
3 cups of rice
1 can of tinned or 1 cup of fresh Gungun Green pigeon peas)
primento seed 3 Scallion
1/2 half can (or one cup) of coconut milk
1 teaspoon of salt
2 sprigs of fresh thyme (2 teaspoons of dried thyme may be used as a substitute)

    this looks fantastic! but we have a child with a pea (legume) allergy in the house. any suggestions for a substitute? was thinking diced carrots may be OK since the sweetness is similar. I know the dish is rice and peas but…

    I've seen many of my Caribbean friends cook rice and they always clean the rice before all the time. The cleaning part is mainly to take away the starchy taste to the rice just like we do to potatoes. Obviously when you wash the rice you can see how clear the water is. Nasty for not washing the rice, it's not a complaint, it's just a fact. What next are people going to throw chicken in the oven without cleaning it with lemon and washing it down. Nasty

    Thanks so much for the tip using the aluminum foil trick. Will be doing it this way from now on.

    And not everyone washes their rice. I think she knows what she's doing!
