I made coconut "milk" this way and it was too watery and not creamy. I wondered about this and then read of another method. Where you infuse the chopped coconut meat in boiling water and let it sit. The hot water will pull the fat and essence from the meat, and then you can strain it and you will have a full CREAMY coconut milk. II'm going to try this hot water method Sunday. I'll report back.
