By the way I am Jamaican but wasn't brought up with this dish and I live in the UK since I was a kid…my grandma cooked it in Jamaica, but I never had her version. My question is…what is cow foot? is it beef shank? what is it? can I use beef shank?

I really appreciate this video. I would like to see you make soup next. Any kind of soup. Also, I would like to see how you clean the meat with both vinegar and lemon. Do you rinse both of the vinegar and lemon off before you start to season the meat or is the vinegar and lemon a part of the seasoning as well?
